3. Grilled Vegetable Quesadillas
Quesadillas are a staple of Mexican cuisine, typically made with cheese-filled tortillas. This version incorporates grilled vegetables, making it a fresh and healthy take on the classic comfort food, perfect for summer.
- Ingredients:
- 4 flour tortillas
- 2 cups shredded cheese (cheddar or mozzarella) (200g)
- 1 red bell pepper, sliced (100g)
- 1 yellow bell pepper, sliced (100g)
- 1 medium zucchini, sliced (200g)
- 1 red onion, sliced (150g)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Salsa, for serving
- Instructions:
- Preheat the grill or a grill pan over medium-high heat.
- Toss the sliced vegetables with olive oil, salt, and pepper.
- Grill the vegetables for about 5-7 minutes until tender and charred, turning occasionally.
- Lay a tortilla in a large skillet over medium heat. Sprinkle half of the tortilla with 1/2 cup of cheese, then layer with a portion of the grilled vegetables.
- Fold the tortilla in half and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and fillings.
- Cut into wedges and serve with salsa.
